Oh yes it’s that wonderful time again for feasting. However, being in charge of dinner can be challenging.  We have a few tips to share with you that could help you keep your stress to a minimum.

  1. You can start dicing your onions, garlic, celery and carrots 3 days in advance. This will get that tedious task out the way.  Make sure to keep them stored in airtight containers in the fridge.
  1. Get your side dishes done and out of the way the day before. No reason to attempt to cook it all the day of.
  1. Rub the inside of the turkey with concentrated chicken base or homemade chicken stock and butter.  This helps to keep the bird moist and tasty.
  1. Leave your turkey unwrapped in the fridge overnight. This allows the turkey to cook with a crispier skin.
  1. Plan ahead for leftovers and make room in the fridge.  You’ll thank yourself afterwards.

Awareness Month

Wear a Purple ribbon to raise awareness!

Any baby born before 37 weeks is considered a premature baby.  In America one of ten babies are born prematurely. This is a significant decline from past years.  At 37 weeks, baby is still developing her lungs and brain so it is important that we prevent delivery at this point. Prematurity can cause long-term health problems such as learning disabilities or breathing problems.  Some of these babies can end up with serious health problems preventing them from attending school or working later on in life. We need your help to spread the word on the problems associated with prematurity. Wear a Purple ribbon to raise awareness.

In addition to our tips, we have decided to share a wonderful recipe for sweet potato casserole that our very own manager has used for years.  It’s a sure to be hit at your upcoming thanksgiving dinner.

This has been a family favorite for over 30 years.  It’s really easy to make, reheats well, and freezes beautifully!”-Louise Lannan

Easy and Delicious - Sweet Potato Casserole

 

Cooking Instructions

  • 3 cups mashed sweet potatoes (Canned are best)
  • 1 cup brown sugar, packed
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1/2 cup melted butter

Using an electric mixer blend the above ingredients.

Topping:

  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup melted butter
  • 1 cup chopped pecans

Use a 2-quart casserole or pie dish.  Spread about 1/3 of the topping on the bottom of the dish, add the sweet potato mixture,

Then top with the remaining topping.

Bake at 350 degrees for about 30-40 mins until crunchy and bubbly. Enjoy!
